Tasting Note
Perfumed red cherry and raspberry with violet and spicy pepper notes, a mineral core and kirsch-like mid-palate. Medium-plus body, fine supple tannins, bright energy and a long, saline finish.

Western: roast duck, herb-crusted lamb, mushroom risotto, roast pork; Asian: Peking duck, char siu (Cantonese BBQ pork), miso-glazed salmon, shiitake/soy mushroom hot pot.

Production Method
Organic/biodynamic viticulture; hand-harvested, partly whole-cluster fermentation on native yeasts; minimal intervention (no pumping, minimal/ no added sulphites); aged 14–18 months in French oak (majority used barrels, ~10% new).
