Tasting Note
Medium–full-bodied Pinot Noir with black cherry, cranberry and dark berry fruit, peony and floral notes, loamy earth, black-olive/saline hints, fine powdery tannins, bright acidity and a long, elegant finish.
Food Pairing
Roast lamb, duck breast, mushroom risotto, beef bourguignon; Asian: Peking duck, miso-glazed salmon, char siu (Cantonese roast pork), shiitake/soy braised dishes.
Production Method
Biodynamic viticulture; vinified with minimal intervention (native yeasts), little/no SO2, no pumping-over, largely whole‑cluster fermentation; aged 14–18 months in mostly used Burgundy barrels (≈90%) with ~10% new oak.
Vineyard Info
Domaine Chandon de Briailles, family estate since 1834 (de Nicolay family); 13–14 ha in Côte de Beaune, converted to biodynamics (Demeter) in 2011; notable for low-intervention winemaking and horse‑worked vineyards.
