Tasting Note
Mineral-driven Pinot Noir with red and dark berries, wild cherry, forest floor, dried herbs and subtle spice. Medium–full body, silky but firm tannins, iron-rich minerality and a long, savory finish.
Food Pairing
Western: Duck breast with wild mushrooms, coq au vin, beef sirloin; Asian: Teriyaki steak, cod in black miso, mushroom soba or miso-glazed aubergine.
Production Method
Hand-harvested, biodynamic viticulture; native-yeast fermentations with substantial whole-cluster inclusion; aged in mostly used oak with minimal new barrels and low added sulfur prior to bottling.
Vineyard Info
Historic de Nicolay family domaine (owned since 1834), 13–14 ha across Savigny, Pernand and Aloxe; run by siblings Claude & François de Nicolay and certified biodynamic/Demeter.
