Tasting Note
Perfumed red berries and peony/violet florals, cinnamon and exotic spice, pronounced mineral/ chalky finish; medium–full-bodied with ripe, supple tannins and lively concentration.

Food Pairing
Western: roast duck, herb-crusted lamb, mushroom risotto, grilled salmon. Asian: Peking duck, char siu pork, miso-glazed fish, shiitake and soy braised dishes.

Production Method
Biodynamic viticulture; hand-harvested; vinified in truncated wooden vats without pumps or added sulphites; partial whole-cluster fermentation; aged 15–18 months in 85% used barrels and 15% new oak.
