Tasting Note
Bright red and black cherry, cranberry, wild strawberry, rose petal, sous-bois, tobacco and dark chocolate; medium–full bodied, silky yet structured with fine tannins and a long mineral, forest-floor finish.

Food Pairing
Roast lamb, duck breast, beef bourguignon, mushroom risotto; Asian: duck pancakes/Peking duck, tuna tataki, miso-glazed dishes, Korean bulgogi.

Production Method
Hand-harvested, ~80% whole-cluster fermentation at cool temperatures; aged 12–18 months in oak (≈20% new, remainder neutral barrels). Biodynamic practices in the vineyards.
