Tasting Note
Concentrated cassis and black berry fruit with cedar, bay leaf, tobacco and crushed stone notes. Medium–full bodied, firm grainy tannins, fresh acidity and a long, savory finish with floral and spice undertones.

Western: grilled ribeye, roast lamb, beef stew, aged Comté or cheddar. Asian: Peking duck, Korean BBQ (bulgogi), char siu pork, Sichuan-style beef, teriyaki beef.
Production Method
Hand-harvested, sorted (optical sorting), fermented in temperature-controlled vats with ~30 day maceration; malolactic fermentation in barrel and aged 18–24 months in French oak (≈35% new).
