Tasting Note

Bright red cherry, raspberry and rose petal, with dried herbs, tar, leather and earthy minerality. Medium-plus acidity, firm ripe tannins and a long, slightly bitter finish; develops tertiary notes of tobacco, dried fruit and truffle with age.


Food Pairing

Western: braised beef, osso buco, truffle risotto, roasted lamb, aged hard cheeses. Asian: Peking duck, soy‑miso glazed short ribs, char siu, mushroom hot pot, Korean BBQ (bulgogi).


Production Method

Hand-harvested Nebbiolo; fermentation in stainless steel with indigenous yeasts and extended maceration. Aged predominantly in large, neutral Slavonian oak casks (big botti) with minimal new oak; low-intervention cellar work.


Vineyard Info

Small-production La Morra estate. Cesare trained at Alba and worked with Roberto Voerzio. Fossati plot lies south of La Morra (~330m) on stony-clay soils; organic/low-yield viticulture and careful canopy work.
