Tasting Note
Dark plum and black cherry with truffle, tobacco and forest-floor aromas; smoky, savory palate of cassis, spice and earth, firm velvety tannins and an elegant, graphite-tinged finish.

Food Pairing
Western: roast lamb, braised beef, venison stews, mushroom risotto, aged hard cheeses. Asian: Peking duck, char siu, Korean beef bulgogi, soy-braised short ribs, mushroom hot-pot.

Production Method
Hand-harvested, destemmed grapes; traditional fermentation with extended maceration and malolactic fermentation, matured ~12–18 months in French oak barrels (portion new).

Historic 5–5.5 ha Pomerol estate (Certan de May) owned by the Barreau-Badar family; long-established site on the central Pomerol plateau near Pétrus and Vieux Château Certan.
