Tasting Note
Perfumed Nebbiolo: rose petals, cherries, raspberries, dried herbs, licorice and tobacco. Silky yet firm tannins, bright acidity, savory undergrowth and porcini notes. Medium‑full body with concentrated red fruit and a long, mineral finish.

Western: braised beef, ossobuco, tajarin with ragù, roast lamb, truffle pasta, aged hard cheeses. Asian: Peking duck, Korean bulgogi/galbi, soy‑braised short ribs, mushroom hot pot, rich umami dishes.

Production Method
Hand-harvested Nebbiolo; fermented with indigenous yeasts in stainless steel; malolactic in oak; aged ~24–30 months in large oak casks and French barrels (≈10% new); bottle-aged before release.
