Tasting Note

Wild cherry, rose, tar and licorice with truffle and red-orange lift. Firm, fine-grained tannins, bright acidity and mid-palate richness; long savory finish and excellent ageing potential.

Western: braised beef (brasato), roasted lamb, bistecca, aged Parmigiano or pecorino, truffle pasta. Asian: Peking duck or hoisin duck, Cantonese char siu, Korean BBQ (galbi), Taiwanese braised beef noodle, umami mushroom stir-fries.


Production Method

Hand-harvested Nebbiolo; stainless-steel fermentation with ~10–15 day maceration; aged ~24–30 months in 300L tonneaux and large oak casks, then bottle-aged. Estate converted to organic/biodynamic farming around 2015.

Ceretto is a multi‑generation Piedmont estate (founded 1930) owning 160 ha across Barolo and Barbaresco; this Bussia bottling comes from a ~7,000 m² plot in Bussia Soprana. The estate follows organic/biodynamic practices.
