Tasting Note
Perfumed Nebbiolo: blackberry, dried strawberry, rose, tar and licorice. Full-bodied with dense, polished fruit, firm grainy tannins, chalky mineral thread and a long, precise finish.
Food Pairing
Western: roast lamb, braised beef, aged hard cheeses, truffle pasta. Asian: Peking duck, char siu, Korean BBQ short ribs, miso-glazed beef, shiitake-based dishes.
Production Method
Hand-harvested Nebbiolo; fermentation with indigenous yeasts and ~20-day maceration; aged ~24 months in large oak casks and tonneaux, minimal new oak, then bottle-aged.
