Tasting Note

Aromas of rose, red cherry, raspberry, orange peel, mint, spice and tar. Palate is elegant yet powerful with fine-grained tannins, vivid acidity, savory minerality and a long, sappy finish.


Food Pairing

Western: grilled ribeye or braised short ribs, porcini mushroom risotto, aged Parmigiano-Reggiano. Asian: Peking duck, Korean BBQ (bulgogi), soy-braised beef, mushroom hot pot.


Production Method

Hand-harvested Nebbiolo; native-yeast fermentation with 20–25 day maceration; malolactic in oak; aged ~3 years in large 20–50HL oak casks and further bottle ageing. Certified organic/biodynamic farming.

Monopole vineyard (≈1 ha) Bricco Rocche in Castiglione Falletto, 350–370m altitude; Diano sandstone/silt/clay soils; old vines; estate-owned by the Ceretto family since 1978.
