Tasting Note
Bright red with cherry, raspberry, blood-orange and rose petal, layered with baking spice, savory tar and a light iron note. Juicy, savory palate with fine dusty tannins and pleasant persistence.
Food Pairing
Western: braised beef, osso buco, mushroom risotto, aged Parmigiano-Reggiano. Asian: Korean bulgogi, Peking duck, shiitake hot pot, Cantonese roast pork (char siu) — pairs well with umami and fatty, savory dishes.
Production Method
100% Nebbiolo. Fermented in temperature-controlled stainless steel with extended maceration, followed by aging ~24 months in large oak casks (with some smaller French oak influence), then bottled and rested.
