Tasting Note
Perfumed Nebbiolo: wild cherry, rose petal, tar and forest-floor notes with hints of cedar and dark spice. Silky yet grippy tannins, medium-full body and long, savory finish with bright acidity.
Food Pairing
Western: roasted lamb, braised beef, mushroom risotto, aged Parmigiano, game. Asian: Peking duck, Cantonese roast pork/char siu, Korean bulgogi, Szechuan-style braised beef, Vietnamese bò kho.
Production Method
Traditional Nebbiolo vinification: hand-harvested grapes, extended maceration, fermentation in stainless steel/wood vats, ageing mostly in large oak casks (botti) with limited new oak, bottled after further bottle ageing.
