Tasting Note
Dark cherry and dried raspberry with rose petal, wild herbs, truffle and light cocoa. Silky, fine-grained tannins, bright acidity, medium-bodied and precise, finishing long with mineral and spicy notes.

Western: roasted or braised red meats, mushroom risotto, aged Parmigiano Reggiano, game and truffle dishes. Asian: Peking duck, Korean BBQ (bulgogi/galbi), soy-miso braised pork, mushroom hot pot, moderately spicy Szechuan beef.
Production Method
Biodynamically farmed Nebbiolo. Spontaneous fermentation in stainless steel, malolactic in oak; aged ~24 months in large oak casks/tonneaux and bottle-aged before release.
Vineyard Info
Ceretto family estate (founded 1930s, Alba). Owns the Bernadot cru near Treiso (~12 acres); converted to organic/biodynamic practices (organic certified from 2015). Winemaking led by third-generation Cerettos.
