Tasting Note
Perfumed rose and violet with red cherry, raspberry and dried herbs; hints of leather, tar and spice. Medium–full body with taut acidity, fine-grained firm tannins and a long mineral finish.

Food Pairing
Western: roast beef, braised short ribs, mushroom risotto, truffle pasta, aged Parmigiano-Reggiano. Asian: Peking duck, Korean bulgogi, miso-glazed black cod or eggplant, Cantonese roast pork, shiitake ramen.

Production Method
Organically farmed Nebbiolo; native-yeast fermentation with ~20–25 day maceration, malolactic in oak, aged ~24 months in large casks/tonneaux and cellared at least one year before release.

Vineyard Info
Ceretto is a multi‑generation family estate (founded 1930s). Asili is a prized Barbaresco cru (circa 1.2 ha, 200–290m elevation, ~40–45‑yr vines). Ceretto pioneered crus and practices organic viticulture and careful cru-specific vinification.
