Tasting Note

Saturated violet color; aromas of blackberries, violets, cocoa and dried herbs. Palate of ripe dark fruit, mocha and savory mineral notes, with fine-grained tannins and a long, spicy finish.

Production Method

Cold maceration (5 days) then 12-day fermentation with 19–22 days post-fermentation maceration; some whole-cluster (≈20–30%); wild yeasts; aged ~12 months in French/500L oak barrels.
