Deep ruby with violet rim. Aromas of cassis, black cherry, graphite, tobacco and dark truffle. Palate shows concentrated dark fruit, savory herbs, polished dusty tannins, bright mountain acidity and a long mineral-tinged finish.
Food Pairing
Western: grilled lamb chops, dry-aged ribeye, roast beef, aged cheddar. Asian: Korean BBQ (bulgogi/galbi), Sichuan-style beef, char siu, miso-glazed eggplant, teriyaki beef or yakitori.
Production Method
Hand-harvested; fermented in concrete eggs, small stainless-steel tanks and French oak roll-fermenters at 26–28°C; 12–18 day ferment, 18–22 day maceration; aged 18–24 months in French oak (1st–3rd use).
