Tasting Note
Crisp citrus and green apple with white-flower perfume, pear and saline wet-stone minerality. Subtle spice and cream from used oak, bright acidity and a stony, persistent finish.

Production Method
Cold pre-fermentative maceration (12h at 6°C). Wild-yeast fermentation in French oak (225L) and 500L fermentors at ≤16°C for 45–95 days. Partial malolactic, bâtonnage, aged 12–16 months in 2nd–4th use French oak; unfined/unfiltered.
