Tasting Note
Fresh citrus, pear and stone fruit with white flowers and light tropical hints. Creamy texture, subtle vanilla/oak, pronounced minerality and bright acidity; medium-bodied with a lingering nutty, mineral finish.

Food Pairing
Western: roast chicken, grilled lobster, creamy pasta, mushroom risotto, aged cheeses. Asian: miso-glazed cod, seared salmon sushi, tempura, milder Thai coconut curry, pork belly with soy glaze.

Production Method
Cold settling; fermentation 15–25 days at ≤17°C; batonnage; aged 10–12 months in 1st–3rd use French oak barrels; partial malolactic influence.
