Tasting Note
Deep violet color with aromas of violets, blackberry, cassis, lavender and baking spice. Silky texture, ripe dark-fruit core, fine satin tannins, lively acidity and a long mineral finish.

Food Pairing
Western: grilled ribeye, roasted lamb chops, mushroom risotto, aged Manchego or cheddar. Asian: Korean BBQ (bulgogi), Chinese char siu, Sichuan beef, teriyaki beef, yakitori.

Production Method
Hand‑harvested vineyard lots; cold maceration and 20–22 day maceration; whole‑berry fermentation in 225–500L barrels with indigenous yeasts; malolactic fermentation and 18 months in French oak; bottled without fining/filtration.
