Tasting Note
Mineral-driven Chardonnay with pear, white peach, citrus and jasmine, subtle tropical notes, toasted almond and vanilla from oak; creamy texture, bright acidity and a long stony finish.
Food Pairing
Western: roasted chicken, lobster or shrimp risotto, creamy pasta, mushroom risotto. Asian: miso-glazed cod, tempura prawns, chicken katsu, mild coconut-based Thai curries.
Production Method
Whole-cluster pressing; 100% barrel fermentation in 500 L French oak with native (wild) yeasts; ~14 months aging; 30% of the wine bypasses malolactic fermentation; first–third use French oak.
