Green apple, lime and lemon zest with wet stone, flint and white flowers; chalky minerality, brisk acidity and a saline, long, tense finish.

Food Pairing
Oysters, grilled scallops, ceviche, sashimi/sushi, lemon roast chicken, creamy mushroom risotto, tuna tataki with soy, steamed fish with ginger and scallions (Asian).

Production Method
Cold settling, fermentation in French oak barrels with indigenous yeasts, partial malolactic fermentation, bâtonnage; aged 12–16 months in 2nd–4th use French oak; unfined and unfiltered.

From 27 selected rows (2.5 ha) in the 'White Stones' parcel of the Adrianna Vineyard at ~1,450 m elevation (Gualtallary). Stony alluvial soils with high drainage; low yields and cool nights.
