Tasting Note
Aromatic, mineral-driven Chardonnay: white flowers, green apple, pear, jasmine and citrus with chalky, saline minerality and subtle spice. Bright acidity, creamy mid-palate from lees and oak, long saline finish.

Food Pairing
Western: roast chicken with herbs, seared scallops, lobster with beurre blanc, mushroom risotto; Asian: sashimi/sushi, miso-glazed salmon, grilled prawns with yuzu, milder Thai coconut curry.

Production Method
Cold settling; fermentation in French oak barrels (45–95 days at ~16°C); partial malolactic fermentation; bâtonnage; aged 12–16 months in 2nd–4th use French oak; unfined and unfiltered.
