Tasting Note
Bright citrus, white peach and jasmine with crushed-stone minerality, saline/leesy texture, hints of ginger and menthol, piercing acidity and a long, chalky finish.

Food Pairing
Western: lobster, scallops, grilled langoustines, roast chicken with cream sauce, creamy pasta, beurre blanc dishes. Asian: miso-glazed black cod, sashimi/ sushi, tempura, Thai green curry, steamed fish with ginger and scallions.

Production Method
Cold settling; fermentation in French oak barrels (45–95 days at ~16°C); batonnage; partial malolactic (biological aging); 12–16 months in 2nd–4th use French oak; unfined and unfiltered.
