Tasting Note
Citrus, green apple and pear with floral lift, pronounced chalky limestone minerality and saline edge; leesy mid-palate, subtle oak spice and bright piercing acidity, very long mineral finish.

Western: oysters, scallops, lobster, roasted chicken, creamy mushroom pasta. Asian: miso-glazed black cod, steamed fish with ginger & scallions, sushi/sashimi, Chinese steamed fish, light Thai coconut curries.
Production Method
Cold settling; fermentation in French oak barrels and 500L foudres (45–95 days) with wild yeasts; partial malolactic; 12–16 months in 2nd–4th use French oak with bâtonnage; unfined/unfiltered.
