Tasting Note
Vibrant citrus and stone fruit (lemon, pear, green apple) with herbal notes (mint, sage), floral and intense chalky/mineral character, bright acidity, weighty texture and a long, saline finish.

Production Method
Cold settling (10–24h at <6°C), fermentation in French oak barrels and roll-fermentors with indigenous yeasts (45–95 days), partial malolactic, bâtonnage, aged 12–16 months in 2nd–4th use French oak, unfined and unfiltered.
