Herbaceous and floral with pear, green apple, citrus, thyme and rosemary; pronounced chalky minerality, saline energy and bright acidity; subtle oak and a long, precise finish.

Production Method
Cold pre-fermentation maceration; wild-yeast fermentation in French oak (225L and 500L) at ~16°C for 45–95 days; 12–16 months aging in used French barrels with bâtonnage; partial malolactic; bottled unfined and unfiltered.
