Tasting Note
Floral and mineral: honeysuckle, lime, dried apple/pear, chalky limestone, saline notes and white pepper. Bright, chiselled acidity with a velvety mouthfeel and very long, bone-dry finish.

Food Pairing
Western: roast chicken with herbs, grilled sea bass, mushroom risotto, lobster with beurre blanc. Asian: sashimi/sushi, miso‑glazed black cod, delicate Thai green curry, ceviche.

Production Method
Hand-harvested, cold-settled then fermented in 500‑L French oak foudres/barrels with indigenous yeasts; partial malolactic fermentation, batonnage and 12–16 months in 2nd–4th use French oak; unfined and unfiltered.

Vineyard Info
Produced by Bodega Catena Zapata from a 2.2‑ha parcel named 'White Bones' in the Adrianna Vineyard; very high altitude (≈1,450 m) with calcareous/limestone soils. Catena is a multi‑generation Mendoza producer.
