Tasting Note
Bright lemon-gold with fine mousse; aromas of orchard fruit, citrus zest and brioche. Dry, crisp palate with citrus and green apple, light almond and toasty lees on the finish. (≤50 words).

Food Pairing
Aperitif and tapas, fried calamari, grilled prawns, paella, oysters and shellfish; sushi and sashimi, tempura, dim sum, ceviche, roast chicken, light salads.

Production Method
Traditional method (second fermentation in bottle); aged on lees roughly 15 months before release.
