Tasting Note
Deep ruby; aromas of black cherry, wild berries, cedar, resin and earthy mineral notes. Medium-bodied, lively acidity, firm polished tannins and a long, spicy, slightly savory finish.

Western: roasted lamb, braised beef, game stews, aged Manchego or cheddar. Asian: Korean BBQ (bulgogi), Sichuan-style beef, teriyaki beef, rich Japanese yakiniku and savory soy-braised dishes.
Production Method
Hand-harvested, destemmed and softly crushed; controlled-temperature fermentation with extended skin maceration; aged ~12 months in French oak barrels before bottling.
