Tasting Note
Red-garnet; aromas of ripe red berries, plum, blackberry jam, black pepper and dried herbs. Medium-bodied, fresh acidity, soft rounded tannins and a smooth, spicy finish.

Food Pairing
Western: grilled lamb, roast beef, pasta with ragu, matured cheeses. Asian: Korean bulgogi, char siu, teriyaki beef, Sichuan-style dishes, yakitori.

Production Method
Cold pre-fermentation maceration (~4 days), separate controlled-temperature fermentation by variety in stainless steel, gravity-handling; tank maturation, no extended oak ageing.
