Tasting Note

Deep ruby; ripe black cherry, plum and blackberry with cocoa, leather and savory spice. Medium-plus body, smooth texture, ripe tannins, balanced acidity and a long, savory finish.

Western: roast lamb, grilled steak, barbecued pork, braised beef, aged sheep or hard cheeses. Asian: Korean BBQ (bulgogi), Sichuan beef, Chinese char siu, Thai grilled beef, teriyaki dishes.


Production Method

Destemmed and gently crushed; fermented in temperature-controlled stainless steel vats with extended maceration; matured about 12 months in French oak barrels and bottle-aged before release.
