Tasting Note
Perfumed blackcurrant and black cherry with cedar, graphite and violet notes. Herbal, tobacco and spice nuances; medium-bodied with velvety tannins, bright freshness and a long mineral-tinged finish.

Food Pairing
Western: roast lamb, grilled ribeye, venison, mushroom risotto, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ beef, braised short ribs, mildly spicy Sichuan beef.

Production Method
Hand-harvested, traditional vinification with parcel selection; matured ~16 months in French oak (≈40% new).
