Tasting Note
Golden colour with candied-apricot, honey, orange-marmalade and floral notes; silky, concentrated palate with bright acidity and a long honeyed finish.

Food Pairing
Western: foie gras, blue/roquefort cheese, crème brûlée, fruit tarts (tarte Tatin). Asian: mango sticky rice, coconut desserts, Peking (roast) duck, mildly spicy Thai curries.

Production Method
Multiple selective passes for botrytis-affected fruit; gentle pressing, plot-by-plot fermentation largely in new oak, lees ageing and maturation (c. 12–24 months depending on year).
