Tasting Note
Citrus and white-flesh fruit with bright mineral notes, lively acidity and medium body; persistent, refreshing finish (bright citrus, green apple, wet stone).

Grilled or roasted white fish, shellfish (scallops, prawns), ceviche, roasted chicken, fresh salads; Asian: sushi/sashimi, steamed fish with ginger & spring onion, light Thai seafood salads, tempura.

Production Method
Total destemming, gentle crushing, ~12h skin maceration, pneumatic pressing, must clarification (24–48h), hyper-reduction fermentation at ~12°C; aged in stainless steel on fine lees with daily bâtonnage.
