Tasting Note

Luminous amber-gold. Intense aromas of orange blossom, honey, dried apricot, fig and candied citrus with saline, herbal and spice undertones; silky, sweet but balanced by bright acidity and a long, mineral finish.


Food Pairing

Western: foie gras, blue cheese, almond biscotti, fruit tarts. Asian: miso-glazed fish or scallops, sashimi, mango sticky rice, mildly spiced Thai/Indian dishes that benefit from sweetness.


Production Method

Hand-harvested Malvasia; grapes partially dried (appassimento) on racks/straw, fermented in stainless steel at low temperature, no malolactic, aged in steel for ~6 months before bottling.

Tenuta Capofaro (Tasca d'Almerita estate) on Salina: terraced volcanic vineyards planted 1990s/2000s. Estate run with sustainable practices; Tasca manages winemaking and estate hospitality.
