Tasting Note
Coastal peat smoke and sea-salt meet Moscatel-driven honeyed dried fruit (apricot, raisin), citrus peel, vanilla and warm spice. Medium-full, oily palate with clean smoke and a long, dry, savory finish.
Food Pairing
Western: oysters, smoked salmon, blue cheese, roast lamb, aged cheddar, dark chocolate. Asian: miso-glazed black cod, grilled mackerel, yakitori, spicy Korean BBQ, rich coconut-based curries.
Production Method
Double maturation: initially aged in American/European oak (ex-bourbon/sherry) then finished in ex-Moscatel (Moscatel wine) casks; bottled at 43% ABV.
