Tasting Note
Concentrated black-fruit core (blackcurrant, black cherry) with floral (lilac), cedar, tobacco and wet-earth notes; pronounced spicy oak and firm grainy tannins give structure, finishing long and savory.

Western: roast lamb, prime rib, venison, duck confit, aged cheeses (Camembert, Comté). Asian: Peking duck, char siu, Korean BBQ (bulgogi), Chinese red-braised beef, rich miso-glazed dishes.

Production Method
Hand-harvested; temperature-controlled stainless-steel fermentation with 18–21 day maceration; aged ~20 months in new oak barrels; light fining and filtration prior to bottling.
