Mature Bordeaux: cassis, black cherry, cedar, tobacco and graphite with leather, dried herbs and earth; firm tannins and long, savory finish.

Western: roast beef, leg of lamb, venison, mushroom stew, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ (galbi), soy-braised beef or braised short ribs.

Production Method
Fermented in enamel-lined/stainless vats; matured ~18 months in oak barrels (c.40% new).
