Tasting Note
Crisp, mineral-driven Sauvignon Blanc with citrus (grapefruit, lime), white peach, lemongrass and wet-stone gunflint. Saline, steely acidity and a long, focused finish with subtle floral and herbal notes.
Food Pairing
Western: oysters, grilled white fish, seafood ceviche, goat cheese, roasted chicken. Asian: sushi and sashimi, Vietnamese spring rolls, grilled sea bass with ginger-soy, lemongrass chicken, light Thai seafood dishes.
Production Method
Hand-harvested fruit; indigenous yeast fermentation in stainless steel; no oak influence; sustainable/Terra Vitis practices; aged briefly on fine lees for texture.
Vineyard Info
Family domaine founded by Alain Cailbourdin in 1980 at Maltaverne (Pouilly-Fumé). ~20 ha across limestone slopes, includes many older vines; focused on terroir-expressive, low-yield viticulture.
