Tasting Note
Dense, multilayered red: blackcurrant and wild berry confit with violet, liquorice, clove and subtle iodine. Velvety texture, ripe fruit, integrated oak and fine tannins, very persistent finish.

Food Pairing
Western: grilled steak (bistecca alla Fiorentina), roast lamb, aged pecorino, mushroom risotto. Asian: hoisin/glazed duck, Korean BBQ (galbi), char siu, savory mushroom stir-fries and soy-braised dishes.

Production Method
Hand-harvested; varieties vinified separately with slow fermentations and malolactic; aged ~14 months in French oak barriques; estate farmed organically/biodynamically.

Vineyard Info
Caiarossa estate (owned by Albada Jelgersma family) farms ~31 ha of vines on a 110 ha estate near Riparbella; converted to organic/biodynamic viticulture since late 1990s.
