Tasting Note
Deep ruby with rose and violet florals, black and red berry compote, pink pepper and liquorice; silky yet structured tannins, bright acidity and a long, mineral-tinged finish.

Food Pairing
Grilled or roasted red meats (bistecca alla fiorentina, lamb), aged hard cheeses, mushroom dishes; Asian pairings: Peking duck, char siu, Korean BBQ, spicy Szechuan beef.

Production Method
Hand-harvested; varieties vinified separately in concrete and wooden tanks with slow fermentations and malolactic; blended and aged ~14 months in French oak barriques (c.30% new).

Vineyard Info
Caiarossa established 1998; acquired by Eric Albada Jelgersma in 2004. Estate practices organic/biodynamic viticulture; cellar designed with Feng Shui principles in Val di Cecina near the Tuscan coast.
