Tasting Note
Bright red-fruit core of cherry and plum with rose, citrus peel and coastal-saline notes. Soft, velvety tannins, lively acidity and a savory, spicy finish with good depth and persistence.

Roast meats, grilled lamb, aged Tuscan cheeses, tomato-based pasta; Asian pairings: Peking duck, Korean bulgogi, char siu, mushroom ramen or spicy Sichuan dishes.

Production Method
Hand-harvested; varieties vinified per parcel in concrete and wooden tanks with slow fermentations and gentle extraction. Malolactic completed; blended and aged ~12 months in large wooden casks.
