Tasting Note
Black cherry, blackcurrant and plum with dark chocolate, spice, tobacco and a hint of herbal green note; velvety texture, polished, silky tannins and a mineral-driven, long savory finish.

Food Pairing
Western: grilled or roasted beef, braised lamb, venison, tomato-based pasta, aged Pecorino/Parmigiano. Asian: Peking duck, Korean BBQ (bulgogi), char siu, Sichuan-style beef, beef rendang, rich curry.

Production Method
Biodynamically grown grapes, hand-harvested; varieties vinified separately in concrete and wooden tanks, malolactic fermentation, blended and aged ~13 months in French oak barriques.

Vineyard Info
Caiarossa, founded 1998, is a biodynamic (Demeter) estate in Tuscany’s Val di Cecina. Feng Shui-designed winery; vineyards at Nocolino (200–350m) on volcanic-influenced soils producing Bordeaux-style blends.
