Tasting Note

Fine, persistent perlage; straw-yellow with green reflections. Aromas of acacia and white flowers with apple, pear, lemon and grapefruit. Crisp, lively and light-bodied with a zesty, citrus-driven finish.


Food Pairing

Western: aperitif, oysters, scallops, shrimp, light pasta with lemon or cream, fried vegetables, salads, sushi/sashimi. Asian: tempura, sashimi, nigiri, dim sum, light Vietnamese rolls, mildly spicy Thai and Cantonese seafood dishes.


Production Method

Glera grapes harvested August–September. Primary fermentation in stainless steel; secondary fermentation using the Charmat/Martinotti method in autoclaves. Brief lees contact, bottled under pressure.

Produced by Ca’ di Rajo (Cecchetto family). Estate in Rai, Treviso with vineyards in Prosecco DOC/Valdobbiadene areas; uses traditional Bellussera training. Founded from family activity dating to 1931; modern production and SQNPI/EQUALITAS certifications.
