Tasting Note
Creamy, silky texture with fine mousse. Aromas of baked apple, white flowers, hazelnut and brioche; citrus and stone-fruit flavors follow, finishing long, savory and mineral-driven.

Food Pairing
Western: caviar, oysters, crab, lobster, saffron risotto, clam chowder, creamy seafood pasta. Asian: sushi, sashimi, tempura, dim sum, steamed fish with ginger and scallion.

Production Method
Traditional method (secondary bottle fermentation). Base wines fermented ~5 months in small oak casks; aged on the lees an average 48 months; low dosage (Brut).
