Tasting Note
Golden-amber color with fine persistent mousse. Intense aromas of ripe and candied apple, citrus, vanilla, hazelnut and roasted nuts. Rich, creamy palate with saline, elegant, long finish.

Food Pairing
Western: oysters, lobster, seared scallops, smoked salmon, roast chicken, creamy cheeses. Asian: sushi and sashimi, tempura, grilled eel, Peking duck, mildly spiced Szechuan or Thai dishes.

Production Method
Blanc de noirs from low‑pressure pressing; base wines fermented 6 months in small oak casks; traditional method secondary fermentation; ~8+ years on lees; zero dosage at disgorgement.

Vineyard Info
Ca' del Bosco, founded by Maurizio Zanella in Franciacorta. Grapes come from three certified organic vineyards in the Belvedere estate (466 m elevation) focused on Pinot Nero.
