Tasting Note
Yellow-straw color; aromas of ripe yellow fruit, citrus, vanilla, brioche and subtle minerality. Rich, powerful palate with good acidity, spicy undertones and a long, persistent finish.

Food Pairing
Western: grilled or roasted white fish (sea bass), scallops, lobster, creamy seafood risotto, roasted chicken, pork tenderloin, aged hard cheeses. Asian: sushi/sashimi (salmon), tempura, dim sum, Chinese steamed fish, Vietnamese spring rolls.

Production Method
Fermented in small oak barrels (barrique/tonneau), 9 months on lees with malolactic fermentation and regular bâtonnage; blended and matured in bottle ~3–3.5 years.
