Tasting Note
Deep ruby with blackberry, black cherry, cocoa, spice, eucalyptus and vanilla aromas. Full-bodied, concentrated dark fruit, firm polished tannins, balanced acidity, warm oak and a long savory finish.

Food Pairing
Western: grilled/roasted red meats, steak, braised short ribs, roasted game, aged cheeses. Asian: Korean BBQ, char siu pork, Sichuan beef, teriyaki/hoisin-glazed duck, rich noodle or stir-fry dishes.

Production Method
Hand-harvested; varieties vinified separately with ~20–22 day maceration; aged in small oak barriques (portion new) and bottle-aged (~1 year 9 months).
